– 1 cup freshly grated Parmesan cheese (plus extra for garnish)

– 1/2 tsp salt (or to taste)

– 1/4 tsp black pepper

– 1/4 tsp red pepper flakes (optional, for a little kick)

– Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta**: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. Make the sauce**: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant (be careful not to burn it!). Pour in the heavy cream and bring to a gentle simmer.
  3. Add the cheese**: Reduce the heat to low and gradually stir in the grated Parmesan cheese. Keep stirring until the cheese is fully melted and the sauce is smooth. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
