Baked Lemon-Pepper Salmon with Salad and Roasted Tomatoes
Ingredients:
Salmon fillet(s)
Lemon (for zesting and slicing)
Black pepper
Olive oil
Mixed greens or arugula
Cherry or grape tomatoes
Balsamic vinegar
Salt and pepper
Instructions:
Preheat oven to 400°F (205°C). Line a baking sheet with foil or parchment paper.
Place salmon fillet(s) on the prepared baking sheet. Drizzle with olive oil and sprinkle generously with lemon zest, black pepper, and salt.
Bake salmon for 12-15 minutes, or until it flakes easily with a fork.
While salmon is baking, toss the tomatoes with a little olive oil, salt, and pepper. Spread them out on a separate baking sheet.
When salmon has about 5 minutes left, add the tomatoes to the oven to roast.
Prepare the salad by combining the mixed greens or arugula in a bowl with a drizzle of olive oil, balsamic vinegar, salt, and pepper.
Once done, transfer salmon to a plate and top with a lemon slice.
Serve the baked salmon alongside the roasted tomatoes and fresh salad.
